Black-Eyed Pea Salad

1 can (15 ounces) black-eyed peas, rinsed and drained
1 cup chopped tomatoes
1 cup chopped cucumbers
½ cup finely chopped red onion
2 tablespoons olive oil
2 tablespoons lemon juice
Salt and pepper, to taste
1. In a large mixing bowl, combine the black-eyed peas, tomatoes, cucumbers, and red onion
2. Drizzle the salad with olive oil and lemon juice.
3. Season with salt and pepper to taste.

4. Toss everything together until well mixed.


Baked Sweet Potato with Greens

Sweet potatoes (as many as needed)
Collard greens or spinach (desired amount)
2-3 cloves of garlic, minced
Olive oil
Salt, pepper

1. Preheat oven to 375°F.
2. Bake until tender, about 45-60 minutes.
3. Sauté minced garlic in olive oil, add greens, and cook until wilted
Season to taste.
4. Split baked sweet potatoes open and top with greens.
